🍓 Ingredients:
For the Base:
• 210g plain biscuits, crushed
• 4Tbsp unsalted butter, melted
• 1 Tbsp light brown sugar
For the Cheesecake Filling:
• 3/4 cup double (heavy) cream
• 2 x 255g full-fat cream cheese
• 1 tsp vanilla extract
• 3/4 cup icing sugar
For the Berry Topping:
• 1/2 cup Little Pips Strawberry and Rhubarb Soda Syrup
• 2 1/2 cups fresh strawberries
• 1/2 cup caster sugar
• 1 Tbsp cornflour
• 2 Tbsp cold water
• Berries to decorate
Method:
1. Prepare the Base: Combine the crushed biscuits with melted butter and sugar. Divide the mixture evenly among serving glasses, pressing it down to form a firm base.
2. Make the Cheesecake Filling: Whip the double cream until thick. Add the cream cheese, vanilla extract, and icing sugar and beat until smooth. Spoon or pipe this mixture over the biscuit bases in your glasses.
3. Prepare the Berry Topping: In a saucepan, heat the strawberries with sugar and soda syrup until the berries release their juices. Stir in the cornstarch slurry and continue to cook until the mixture thickens slightly. Allow to cool completely.
4. Assemble: Once the berry mixture has cooled, spoon it over the cheesecake layer in each jar.
5. Chill: Refrigerate the assembled cheesecakes for at least an hour before serving to allow them to set.
